FOR 2 PEOPLE, YOU WILL NEED
2 large eggs
2 cups milk (buttermilk is best!)
1/4 cup unsalted butter, melted
2 ripe bananas, mashed
2 cups plant-based milk
1/4 cup coconut oil, melted
Preheat non-stick skillet over medium-high heat. Lightly grease.
Step 1: In a bowl, beat wet ingredients.
Step 2: Using a spatula, combine 1 cup of the mix with the wet ingredients. Make sure you're not overmixing the batter! Thick, lumpy batter = delicate and moist pancakes!
Step 1: Ladle 1/3 cup of batter into the skillet.
Step 2: When bubbles appear and the edges begin to brown, it's time to flip. It should take about 2-3 minutes per side.
