The Story: New to soba noodles? Soba is the Japanese word for “Buckwheat” and they are soften served cold. They are an amazing base for a salad, and in this dish we have marinated them in a wonderfully flavourful dressing with miso, ginger, and sesame.
Cucumber, edamame and cilantro coupled with some pickled carrot provide fresh crunch. A wonderful combination of textures, colours and flavours makes this Japanese inspired salad a great side for any of our meals or a treat to eat as a solo lunch.
