FOR 2 PEOPLE, YOU WILL NEED
6 large eggs
4 cups milk (buttermilk is best!)
10 tbsp unsalted butter, melted
6 ripe bananas, mashed
4 cups plant-based milk
10 tbsp coconut oil, melted
Heat waffle iron according to manufacturer's instructions. We recommend a medium heat setting. Lightly grease.
Step 1: In a bowl, beat wet ingredients.
Step 2: Measure out 1 1/3 cups of the dry mix in a separate bowl. And make a well in the center.
Step 3: Pour wet ingredients into the well. Gently and steadily, whisk together, starting in the center until all the lumps are gone. Make sure you're not overmixing the batter!
Ladle 1 cup of batter into the waffle iron. Use a heatproof spatula to spread mix gently towards the edges before closing the iron. It should take about 3-4 minutes, but it depends on your iron!
