Veggie Enchiladas

The Story: A smokey, hearty vegetarian Enchiladas, comes with 3 tortillas packed with a mixture of beans, corn, and sweet potato. Our Enchiidas are topped with a smokey tomato and chili sauce, and old cheddar cheese. They are a meal on their own but really shine on the side of a light salad.

They are served with a Lime & Coriander Crema which provides a sharp, fresh and creamy contrast to balance the whole meal.

Portion: Serves approximately 2-3 people.

How it Arrives: Arrives in an oven safe foil container ready to be heated.

Heating Instructions: Preheat oven to 375°F/191°C. Bake uncovered for 20 to 30 minutes.

Enchilada Ingredients: corn, sweet potatoes, tomatillos, olive oil, onions, poblano pepper, garlic, salt, pepper, cumin, tomatoes, cider vinegar, chili powder, No7 Arbol hot sauce, sour cream, lime, pinto beans, white cheddar, flour tortillas
